Cranberry Fruit Bread

Ingredients

2 c. plain flour

3/4 c. orange juice

1 cup sugar

1 T. dried, grated orange rind

1/2 t. salt

1/4 c. oil

1 egg (well beaten)

1 1/2 t. baking powder

1 to 2 c. coarsely chopped fresh cranberries

1 c. broken nuts

Directions

Combine all dry ingredients thoroughly with wisk.
Combine all wet ingredients in separate bowl and mix thoroughly.
Fold in nuts and cranberries.
Spoon into a greased 9"x5"x3" loaf pan.
Spread corners and sides slightly higher than center.
Bake at 350 degrees F for 1 hour.
